1 1/2 cups all purpose flour
1 cup sugar
1 tablespoon sugar
3 teaspoons grated orange peel
1 1/2 teaspoons baking powder
1 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon baking soda
2 eggs, lightly beaten
1 cup cold mashed sweet potatoes (without milk or butter)
1/4 teaspoon ground cinnamon
Ginger butter
1/2 cup soft butter or cream cheese
2 tablespoons finely chopped cristallized ginger

In a large bowl, combine flour, 1 cup sugar, orange peel, baking powder, ground ginger, salt and baking soda.

In a small bowl combine eggs and sweet potatoes.

Stir wet into dry ingredients just until moistened.

Fill muffin cups two thirds full. Sprinkle remaining sugar and cinnamon over batter.

Bake at 400 °F (205 °C) for 16-20 minutes or until wooden toothpick comes out clean.

Combine ingredients for ginger butter and serve with warm muffins.
